Since the bird is very small, the breast is the primary meat to work with. Simply rinse well and pat very dry. Add either a prepared Italian dressing or make your own marinade with olive oil and spices of your choice. You can’t go wrong, so let your imagination lead you. Let the birds marinate for at least an hour in the refrigerator. Longer is better. Remove from the refrigerator and allow the doves to come to room temperature. Fire up your grill and let them grill to a nice brown. Another option is to add a piece of bacon wrapped around the bird and secured by a wet toothpick. The bacon adds a lot of flavor and moisture. You will love it! Simple and easy. Pair it up Italian sausage, acorn squash, sliced tomato, and an arugula salad. Wow!!!
